This is something that my mum used to make when i was young....it was delish and i'm going to be making part of it on Boxing day.
Make the base....blitzed ginger biscuits mixed with melted butter and allowed to cool
Whip medium tub (300ml) of double cream until stiff.
Add a small tin of crushed pineapple or finely chopped cubed pineapple. You must drain this really well.
Add 5 tbl sp of ginger preserve
Add 2 tbl sp of ground ginger.
Mix the cream with pineapple and finger and put in biscuit base.
That's it. I suppose you could add stem ginger if you wanted.
I'm going to make the cream/ginger/pineapple bit and spoon it into brandy snaps for pudding

I am not into sweet stuff in any way but that sounds lovely - the pineapple and the ginger would be perfect together...thanks andy,!!

Sounds like a similar thing to what my MIL used to make but she used ginger biscuits whole and stuck them all together like a swissroll shape with the mixture, yummy scrummy
