I spotted this recipe & thought it would be a good way to use up surplus cooking apples
Ale, Apple & Mustard Chutney
1 Kg (2 lb) cooking apples quartered cored peeled diced
500 g (1 lb) onions finely chopped
250 g (8 oz) Celery, diced
250g (8 oz) diced ready stoned dates
550 ml bottle brown ale (most are 500 ml now so just use one bottle but if you have the extra 50 ml chuck it in)
150 ml (1/4 pt) malt vinegar
300 g (10 oz) demerara sugar
2 tbsp white mustard seeds, roughly crushed
1 tsp Turmeric
1 tsp Salt
1 tsp black peppercorns roughly crushed
Method
Add all the ingredients to a preserving pan and cook, uncovered over a gentle head for 1 3/4- 2 hours, stirring from time to time, but more frequently towards the end of the cooking as the chutney thickens.
Ladle into warm, dry jars, filling to the very top and pressing down well. Disperse any air pockets with a skewer or small knife and cover with screw-top lids. Label and leave to mature in a cool, dark place for at least 3 weeks. I can never wait that long and have been known to attack a jar immediately.

Tig, sounds like a tasty chutney to me, I'd probably leave out the celery though as I find it quite an overpowering taste when cooked.

Been thinking about this since I saw it Tig, and I think that if I took the dates out (can't abide them) it would be wonderful...I can even get ale here if I go to the next town!!

The dates would probably taste of celery RF I agree with Chuckles it can be a very overpowering flavour, but I quite like it. I also found a fairly simple recipe for sweet piccalilli which I will try next year, maybe even use up any surplus courgettes!

We love Celery and in winter I use always it in stews, soups etc and celeriac we use together with mashed potatoes etc. I don't like anything sweet so tend to either cut something out that is too sweet or reduce sugar...
