Rosefriend, I don't know if you have tried this recipe or not, but thought you might like it. We make it quite often, this is one my son gave me, but he leaves the tomatoes whole so the insides don't get all over everything. I have done it with frozen green beans as well and its fine.
Mediterranean Vegetable Medley2 cups water 2 pounds fresh green beans, trimmed 2 tablespoons butter 1 tablespoon olive oil 1/2 cup pitted black olives, cut in half
| 3/4 cup small cherry tomatoes, cut in half 2 teaspoons finely chopped fresh oregano leaves* 1/4 teaspoon pepper 1/2 cup crumbled feta cheese, if desired

Place water in 4-quart saucepan. Cover; cook over medium-high heat until water comes to a boil (2 to 3 minutes). Add beans. Cover; continue cooking until beans are crisply tender (4 to 6 minutes). Drain. Add butter, oil and olives to beans. Cook, stirring occasionally, 3 minutes. Add tomatoes, oregano, salt and pepper. Cook, stirring occasionally, 1 minute. Top with feta cheese, if desired. Serve immediately. Serves 8 Recipe Tip - Sprinkling beans with salty feta cheese adds great taste. Look for different varieties, such as feta flavored with garlic and herbs, sun-dried tomatoes or peppercorns. Per serving: Calories: 140, Fat: 10g, Cholesterol: 15mg, Sodium: 380mg, Carbohydrates: 11g, Dietary Fiber: 4g, Protein: 4g *Substitute 1 teaspoon dried oregano leaves.

This looks lovely - olives would have to go as I can't stand them but the rest is great - got loads of beans growing, love Feta as well. Have you ever added onions, possibly red onions, or don't you need them blc,?

Have you ever added onions, possibly red onions, or don't you need them blc,? Never needed them, but I would used white or yellow but that is just me. You could also leave the olives whole if you making it for others, then they are easier to evade. I have eaten it both cold and warm and its ok either way but I tend to make it as a warn dish. I think onions would work just fine.
