A must if we have loads of tomatoes.
2 peaches.
1.25 kg, tomatoes.
3 Tbs of olive oil.
8 mint leaves.
black pepper.
Heat oven on gas 9. or 240 electric.
Halve the peaches and place in a roasting dish with the tomatoes, drizzle with 2 spoons of oil, and roast for 30 minuets, allow to cool and puree, with some seasoning, the mint leaves and some more oil, sieve to get rid of pips, serve hot or chilled it's your preference with a mint leaf and a drizzle of oil..
