Tonight I have a friend and her husband staying (I'm not sure whether I'm allowed to mention names!) and I'm doing my spicy lentils with Bombay Aloo and garlic naan (I cheated and bought the naan) followed by Bakewell Tart and a cheeseboard.

I had chips with cheese grated on top...yummm dont tell OH hes on a diet ! I bought some of my favourite Tunnocks caramel wafers too, naughty arent I? And if he sees choccie wrappers in the bin Ill say

We went for a cold damp canal walk yesterday and LP wanted to hold Blod's hand all the time while the men nattered behind us, and today we went to the local Wildlife Trust and FROZE! The food went down well and generally we had a lovely time.

We have just cleared up the bomb-site!!! Our family came for Sunday lunch to celebrate OH's 65th birthday! We had Roast beef and Yorkshire puds Roast Potatoes and Parsnips Savoy cabbage Green beans Carrots Leek and cauli au gratin and gravy followed by Chocolate truffle tart ( M&S) or orange meringue nests Or jelly and ice cream followed by cheese and biscuits and a glass of Port We have had a really lovely afternoon

Made a fantastic pie tonight. Chicken, sweetcorn, mushroom and peas with Campbells condensed white wine and chicken soup as the sauce...all done in puff pastry. The problem was....i put all the stuff in the pie, put the top on and bunged it in the oven. 10 minutes later, i realised i hadn't put the sauce in. So i took the top off....added the soup and put it back Twas perfect though

Sounds yummy Andy....I made OH an omelette with onion, potato, bacon, peppers, sausage and cheese (and eggs o'course...). He said it was lovely.....I had some dry toast.(it wasn't lovely)

That's how i usually do my curries aprilaydee. Cook the chicken in the coconut milk and greek yoghurt and then add to it....Tikka paste, pureed tinned tomatoes, spices and then some double cream at the end. Finnished off with fresh chopped corriander which gives that lovely metallic orange taste.

I usually do curries with just a tin of chopped tomatoes (asda smart price ones), some spices (or curry powder depending how lazy I'm feeling), onions, peppers and garlic with whatever meat I've got out the freezer lol
As for the recipe... well, it started like the one below and got adapted to what I had in the cupboard so it's not how I'm going to be cooking it but I won't be cooking it the same as I cooked it last time either!
I think that's how my salmon and cucumber risotto ended up as tuna with rice... Tasty though!
Preparation Time 20 mins Cooking time 45 mins Serves 4
8 skinned chicken thighs on bone approx 700g 175g Onions, finely chopped 2 tsp garlic puree 2 tsp ginger puree/grated ginger half tsp turmeric 50g low fat natural yoghurt 2 tsp coriander seeds 1 tsp cumin seeds 1 dried red chilli, chopped 2.5cm cinnamon stick, broken in half salt 40g coconut milk powder 1 tbsp sunflower oil 5-6 large cloves, finely sliced 1 fresh red chilli, deseeded and sliced 2tbsp fresh coriader, chopped 1 tbsp lemon juice
1. trim any excess fat from the thighs and put them into a heavy based saucepan with the onions, garlic, ginger, turmeric and yoghurt, stirring until well blended. Place the pan over a medium heat and bring to the boil. Reduce the heat, cover and simmer for 20 mins, stirring occasionally.
2. Toast the coriander and cumin seeds, dried chilli and cinnamon in a small heavy based pan by dry frying them, stirring continuously until they start to release their aroma. Turn off the heat, continue to stir for a few seconds, then transfer them to a plate to cool. When they are cool, grind them finely in a spice mill or using a pestle and mortar.
3. After the chicken had simmered for 20 mins, increase the heat slightly, uncover and cook for 5 mins, stirring frequently, or until the sauce in the pan reduces to a thick paste. Boil a kettle.
4. Stir in the toasted spices and a pinch of salt, then reduce the heat and simmer for 3-4 mins.
5. Blend the coconut milk powder with 300ml of boiling water, then stir it into the chicken mixture and continue simmering, uncovered, for 6-8 mins, stirring continuously, until the juices run clear when the chicken is pierced with a knife.
6. Meanwhile, in a small pan, heat the oil over a low heat and fry the garlic until it had browned slightly. Add the fresh chilli and cook for 30 secs, then add them to the chicken.
7. Reserve a little of the chopped coriander and stir the remainder into the chicken mixture with the lemon juice. Remove the pan from the heat, sprinkle the chicken with the reserved chopped coriander, garnish with sprigs of coriander and serve with boiled long grain rice.
Per serving: Calories: 373 Carbohydrates: 10g Protein: 36g Fat 22g, saturated fat 9g
Mine will come out nothing like the pic in the book but it'll be tasty anyway!
