We did this today via our zoom cookery class and it's absolutely delicious, very very light and more like a cake than a bread but you could butter it if that's what you fancy, it can also be toasted after a day or so the cook said although I've not tried that. 225g self raising flour 350g mixed fruit, any kind any varieties 300ml cold tea made with 3 or 4 tea bags 125 golden caster sugar (golden helps with the lovely colour of the bread) 1 beaten egg Pinch or two depending on your taste of cinnamon or mixed spice or can be made without Honey to pour over just before the bread cools if you want but it's not essential. Soak fruit in tea mixture overnight so the fruit absorb the tea and plump up. Add sugar egg flower and spice/spices and mix well Pour into a greased 900g loaf tin lined with parchment Bake in a preheated oven at a 170c (fairly low heat really) for about an hour, may need another 5 or 10 mins depending on your oven. When cooked it should be a lovely golden brown and firm to the touch. Cool on a wire tray and pour over the warmed honey before the bread goes cold. They say to keep it for 2 days or so before cutting and eating but we had some as soon as it cooled.
