I decided to use the steamer again but for something a bit different, and I've been getting rave reviews from family and friends! Tomato ketchup has far too much sugar in it for my taste so I made my own.
I steamed 2kg of tomatoes and 1/2kg onions for 90 minutes and collected the juice. I mashed the pulp that was left and squeezed it through a muslin bag into the juice. (Could have boiled it all and put it through the bag I suppose, but I wanted to minimise that bit.)
I added 600ml of tomato paste to thicken it up a bit, some basil and garlic and chilli to taste. Half a cup of sugar and a cup of white wine vinegar plus a little salt then went into the pot.
I simmered the mixture and reduced it by about a third which gave me a consistency a little thinner than commercially bought ketchup. I ended up with 4 pints in 8 x 8oz jars. These had been in the oven for twenty minutes at gas 4 to sterilise and went back in for half an hour after filling.
It's very piquant and you can taste the chilli, but you can vary that according to taste.
