My climbing French beans have now gone to seed, is it correct that if I dry the seed pods, the bean seeds can be used as haricot beans and used in stews and casseroles

Hi Scarecrow - nice to see you again..
I hope that someone else answers with more knowledge but as far as I know there is no problem. I did it once but it was more accidental than anything else - I just forgot to pick them and they dried.
One thing I did learn afterwards that it is better to put the beans (without the pods) into the freezer in a bag for 48 hours to kill any tiny creepy crawlies that might be around...
You can also use them for sowing next year I think, as well..

Yes they can, and they can be saved to sow next year as well. I'm still waiting for my Blauhilde Purples to dry out.
