Zweibelkuchen or Onion Cake is all the rage in Germany around the Oktoberfest time and I found a great new recipe which is a dream eaten warm or cold...as long as you love onions!!! As you can see there is a thick layer of onions at the bottom . I was worried that the pastry would be all soggy but it was beautiful...a really wonderful rich shortcrust pastry. Here is the recipe for anyone wanting to have a go: 250g Flour (Plain) 150g Marg Pinch of Salt and Sugar 1,4kg Onions 200g smoked bacon (use the bits that you can buy, or small chunks) 200g Crème fraîche 30g Butter Majoram and Caraway powder 200g Gouda or other cheese. Mix Flour and Margarine, 6 -7 tablespoons of water, Salt and Sugar together, using dough hooks. Leave to rest covered for 30 mins. Roll out the pastry for whatever you want to use - I used a Quiche form but a baking tray is fine and actually the German way... Peel onions and cut into fine rings. Dice bacon and slowly cook the onions and bacon until tender. Add to the pastry case.. Mix together the Crème fraîche, runny butter and herbs. Grate the cheese and add to the mixture. Mix well and add over the onions. In heated over 200C/180 CFan/ Gas 4-5 for 30/40 mins until brown as in pic. It tastes perfect when still just warm. Freezes very well also. RF

Attack of the quiches. Again. Trying for a happy medium between the carnivore and the rabbit food eaters!!! Two sausages squeezed out and half and half with some champignons, with the egg mix at the ready. Out of shot, grated cheese... I often start to scoff them down before I remember to take a photo...
