Raspberry Pie

 




I make this pie a lot, but usually with strawberries and sugar free raspberry gelatin.  We picked just over 5 cups of raspberries in the past couple of days off our raspberry bush, so I decided to try it and it turned out very well.

3 Tablespoons of sugar or artificial sweetener of your choice 2 tablespoon cornstarch                                             1-1/2 cups of water

1 package (0.3 ounces) sugar free raspberry or strawberry gelatin 4-5 cups fresh raspberries 1 graham cracker crust (9 inches) or refrigerated or crust of your choosing.

In a small saucepan, combine the cornstarch and water until smooth. Bring to a boil, stirring constantly. Cook and stir for 2 minutes or until thickened. Remove from the heat; stir in sugar and gelatin until dissolved. Cool for 15 minutes (optional).

Using a spoon gently spread a light layer of gel in the pie crust.

Gently fold in the raspberries until well covered. Slowly pour gelatin mixture into the crust. Spread evenly. Chill until set, about 3 hours. Yield: 6-8 servings.

It does. I used the sugar free jello. I wish raspberries didn't have seeds though, but, oh well. I put a little Redi Whip whopped cream on it or some frozen vanilla yogurt.
