Hi everyone. maggy asked me to post the recipes I've used with the diet I'm on. The easiest way to do it is to post links to the recipe and then just mention any changes I made. So here they are.
1. Kung Pao Chicken. I used chopped carrots and broccoli instead of chicken just because they were ingredients I wanted to get into my diet. I also used balsamic instead of black vinegar and left out the hoisin and wine as I didn't have any.
2. Mushroom and Lentil Curry. There was way more than I needed her, should have cut down the amounts. I used Quinoa instead of rice but I wouldn't do that again. I'll stick with brown rice next time.
3. Mushroom and Lentil Bolognese. I left out the pasta in this one.
4. Mushroom Curry. This is the next one I'm going to try. There's a lot though so I need to cut down the amounts.

You wouldn't think you could eat a cottage pie and get away with it as a diabetic but with some simple changes I did and really enjoyed it. I used 400g 5% fat minced beef. Slice a medium onion and fry in a little extra virgin olive oil for 2 to 3 minutes, add the mince and brown. Add salt, pepper and preferred spices (mine was garlic and turmeric), a little water (50-100ml) and heat through. Put to one side. Peel 4 medium carrots, half a swede and 4 or 5 medium potatoes, cut into cubes and bring to the boil in the same pan. Simmer until ready to mash. The carrots may not mash completely but that's fine. Place in a casserole or pyrex dish and cook for an hour at Gas 5, (375F, 190C). Serve with a little gravy. Enough for 2 or 3.

Is it the potatoes or mince that you have to be careful with Ron , ? The potatoes, maggy. They turn to sugar very quickly in the gut and will cause blood sugars to rise. Eating them with veggies mixed in stops that happening.

That’s good to know, my dil and sis have recently been diagnosed with type 2 . You tend to think it’s just cake and biscuits but it’s not as simple as that is it.

I use some of the Heart Foundation recipes that OH prints off the website. He recently had a blood test that showed pre-Diabetes so we had to cut down our carbohydrate intake too...Hubby lost tons of weight and his HbA1c is back to normal now. I belong to slimming world altho I've not lost much weight yet (my fault not theirs), their recipes are pretty good...and I bought the PON (Pinch of Nom) recipe bool which is excellent. I followed PON on fb and often used their recipes...the book means not having to scroll down the screen and lose my place as I cook
