This recipe is from a Good Housekeeping magazine...I've tweaked it tho. In their recipe they use caster sugar in the pastry, I find that icing sugar gives a shorter, crisper pastry.. Also they serve the tart with strawberries. I find winter strawberries a bit too sour so I prefer to just grate a little dark chocolate over the tart as a contrast. The filling is rich, silky smooth and absolutely luscious.
Sweet pastry...you all know how to make pastry cases I'm sure. It should be baked through before the filling is added as it isnt cooked further. Pastry ingredients. 225g plain flour 100g butter 2 tablespoons of icing sugar I large egg, beaten. Make the tart case , don't overwork the pastry and remember to rest it in the fridge before you roll it out and again once you've put it into the tart tin. (20cm) . Prick with a fork. Initially bake with a sheet of greaseproof paper and baking beans to maintain the shape (10 - 15 min 190°C/170°C fan/gas 5) Remove the beans and paper and finish baking the tart case. Takes about another 10 -15 minutes depending on your oven.
Filling Put a large, heatproofbowl over a pan of gently simmering water, make sure the bottom of the bown doesnt touch the water. Add 250g mascarpone Break over the top 200g white chocolate (cadburys milky bar is PERFECT for this tart) DO NOT TOUCH
DO NOT STIR Let it gently melt down. The way you know it's ready is if the squares of white chocolate are all soft...takes aaaaaaages. Remove from the heat, stir well and leave to cool a bit. In a separate bowl pour 150ml double cream, whizz until thick then gently stir through the chocolate-mascapone mixture
Pour into the pastry case Refrigerate overnight TRY not to eat it all...
Any questions?
