I have a japanese quince (Chaenomeles) sp? and have heard that you can make jelly and preserves from it anyone got a recipe? Its laden with yellow fruits atm and it seems a shame to waste them.

Morning Sweetleaf, I just happen to be sitting by my old, battered preserves book so....it says Quinces make a fine jelly and are full of pectin so don't need anything added. Simmer all the fruit (don't bother to peel or hull) until completely mushed adding only enough water to cover, strain in a jelly bag overnight. 1 pint of juice to 1 pound of sugar (sorry -olde booke!), Boil to setting point, removing scum and bottle immediately. Yield: multiply the weight of sugar by 10 and divide by 6. Well, that sounds simple, hope it works!

Thanks 4P, no need to apologise about imperial measurements, I still struggle with the conversion, litres ml. etc and always work with pints! Ill give that a go, and let you know how it works out later ;D ;D

Well, it worked! (Amazement and applause)..thank you 4P, I ended up with only two small jars, but it has a nicely sour/sweet flavour and is apparently very good for you ;D I definitely recommend it!

I appear to have a Quince tree/bush i my garden, so I started reading up on them, I read that the pips are very poisonous so you may want to leave them out of the recipe.

No mention of that anywhere I can find, but the recipe called for straining anyway so they are not used.....Im still alive and Ive eaten a fair amount of it and very tasty it was too! Thanks for your concern though........... ;D. www.pfaf.org/database/plants.php?Chaenomeles+japonica
