Oldest daughter will be visiting soon so with thoughts of veggie recipes All amounts are approximate as that is how I cook - usually end up with enough for another family but the veg sauce freezes very well Veg sauce: onions courgettes peppers tomato puree/tomatoes garlic And anything else you fancy Fry loads of onions courgettes and peppers in chili flavoured oil with a couple of cloves of garlic add some water and tomato puree and simmer until well thickened (can take quite a while) then put through the blender. Grill slices of aubergine, courgettes and onions under a hot grill Make a tower using the veg slices and mozzarella cheese,and put in a hot oven till the cheese starts to melt, spoon veg sauce around the bottom and serve with rocket salad and warm bread Who needs meat (my OH)

I've got a fab recipe for a vegeterian strudel somewhere - really delish, even meat eaters like it.
From what I can remember you use firm vegetables like courgettes, onion, mushroom, peppers, not tomatoes they are too watery. fry gently to just soften them slightly.
Get some sheets of filo pastry, brush each one with some butter, and layer three or four sheets, pile the veg mix down the centre, dot with some good motzarella or brie and add a handful of toasted pine nuts, wrap up and brush the top with a little butter and sprinkle with some parmesan.
Bake in a hot oven for about 15 minutes until lightly brown, serve either hot or warm with some green veg or salad.

That sound really good Dee, I love veggie food but OH, bless him, can't do without his meat so I only really get to indulge when eldest daughter comes for a visit, reckon I will give that a try
