Try this if you have a surplus of beetroot; it keeps for about a year.
*Boil the beetroot in the normal way, then cut into small squares and place into jar/jars.
*Make up a 1pt lime jelly, instead of using a pint of boiling water, use 1/2pt of boiling water and 1/2pt of (cold) white vinegar - then pour this over the beetroot and allow to set.
A spoonful (or two) of this is much less messy on a salad than pickled beetroot.

Or why not use windfall apples to make the jelly, which can be infused with herbs too, and then add the beetroot once it's cooled a little.

I've never tried it with lime jelly DK, but MIL did make some the other day with rasperry jelly ... and that was <lip smacking smiley>

What next beetroot and spam puree?

I can't vouch for the lime n beetroot spruance, but the raspberry and beetroot is very nice indeed but I will be asking MIL to make some of the lime and beetroot
... and will skip the spam

I've never tried a raspberry variation, but I'm sure you'll enjoy my lime recipe. The tang of lime with the beetroot makes for a great combination.
Btw, cooking comes very close to gardening in my list of interests.

An uncle of mine used to make wine from all sorts of veg. That was pretty good to & potent. Never fancied beetroot with sweet things though. Ok on its own, but with Lime Jelly... Eeeuurrgghh! It's fine with salad, cold meats, ploughman's etc.

I must admit I don't usually like 'sweet n sourish' things but that went against everything I believe in <just proves you've got to try everything once smiley> altho' I stated to my wife that it doesn't mean I'll take apple in my salad !

I know of no recipe for specifically for cherry toms although I could let you have ideas for using-up tomatoes in general.
I must say that I'm usually a bit conservative in my eating requirements myself. However, I have to say that I really quite like certain fruits added to salad such as (as you say) apple, grapes, & slices of strawberry, kiwi-fruit etc.

well in the absence of a salad, i did indeed try out the beetroot in lime last night ............ with a curry figuring that you had lime pickle with a curry so why not lime jelly (and beetroot).
a strange but enjoyable mixture. and the two jars are still in the fridge (and not in the bin). the OH wasn't brave enough, but i thought it made a pleasant change. thanks for the tip.
