This was invented by a friend of mine, and just had it for dinner, delish.
Vegggies Pasta Barbecue sauce Humus
Any veg that you have in the bottom of the fridge suitable for stir fry,
Ive just used an onion, garlic,peppers mushrooms and a couple of slightly bendy sticks of celery, all chopped into medium chunks.
Stir fly all of these in a little oil.
Cook the pasta.
Add just enough barbeque sauce (I like the Paul Newman one) to just moisten the veg, drain the pasta and stir in the veggies in, mixing well.
Put onto warm plates and top each with a generous dessert spoonful of humus

Hi Dee Your meal from the bottom of the fridge sounded interesting. Not sure how I would use courgette, pepper, lettuce, runner beans, cucumber - I suppose I could make a green salad with the lettuce and cucumber, and then mix pasta with the rest, and perhaps top with grated cheese? Jean

Hello Jean, Sounds good doesn't it I keep a pot of parmesan in the fridge...it helps out many a "Thursday Dinner",especially if there's pasta with it.I put the pasta in the dish,give it a sprinkle of parmesan,top with the stir fry mix,then another sprinkle.Course,a glass of wine makes it taste even better
