Fruited tea bread As made by yours truly, special notes at end of recipe dictated by my little piranha (bless)
200g (7oz) sultanas 200g (7oz)raisin 425ml (3/4) pint tea 350g(12oz)wholemeal plain flour 2 teaspoons ground mixed spice 2 teaspoons baking powder 50g (2oz) light muscovado sugar 17g (6oz) dates,chopped 110g (4oz)ready to eat dried apricots, chopped 25g (1oz) butter, melted 2 eggs beaten
1 Soak the sultanas and raisins in the tea over night.
2 Preheat oven oven to 160c/325f/Gas mark 3
3 Grease 2 x 450g (1lb) loaf tins and line the base with grease proof paper (I actually line whole whole tin)
4 PLace all the dry ingredients in a large bowl and mix well. Add the soaked fruit with any extra liquid, and the remaining ingrediatsand mix well. Divide into the loaf tins and level the surface.
5 Bake for 50-60 mins until risen and firm to the touch. Cool in the tins and then transfer to a wire rack until cold.
IMPORTANT NOTE FOR MEN!
do not go to step 2 until step1 is complete. steps 3 and 4 can be attempted before step 2 complete. step 5 needs step 1 to be completed.
