This is a favourite of mine SMOKED SALMON AND TAGLIATELLE IN A CREAMY SAUCE Serves 3-4 Cooking time 12-15 minutes 1 tbsp Olive oil Small leek, thinly sliced Clove garlic, crushed with a little salt 150g pack smoked salmon 200ml tub Crème Fraiche 2 tsp lemon juice 1 tbsp chopped dill 1 tbsp chopped basil Freshly ground black pepper 250g egg tagliatelle 1oz grated Parmesan 1. Heat the olive oil in a medium frying pan. Gently fry the leek and garlic over a medium heat for approx. 3 minutes to soften (not brown). Stir in salmon, crème fraiche, lemon juice and herbs. Add some freshly ground black pepper and stir continuously for 5-8 minutes to heat through. 2. In the meantime cook tagliatelle as per instructions. 3. Serve smoked salmon mixture on top of the tagliatelle and sprinkle grated parmesan over mixture. Garnish with a fresh basil leaf.

Done a couple of tagliatelle dishes myself this week. No1 was for my daughter....grilled bacon squares...grilled until crispy, peas and a homemade cheese sauce with tagliatelle...all mixed up and parmesan cheese on top.....she loved it !!! No 2 was for me and the wife. Stir fry some veg of choice......i used red onions, peppers, mushrooms and courgette. Stirfry in olive oil, garlic and ginger and add a bit of honey at the end. I added 500ml of double cream and started to reduce. Also added some lemon juice, honey, white wine vinegar and soy sauce. After simmering for 10 minutes, i added the cooked (al-dente) tagliatelle to the cream mix and simmered for a further 5 minutes until the tagliatelle had absorbed a bit of the sauce, leaving a nice, thick, creamy, sweet tagliatelle stir-fry type concoction I just stood at the cooker without any game plan and threw it all together and it was orgasmic !!!

That's pretty much what I do Rita, except that I use a small onion rather than a leek! ;D

That's pretty much what I do Rita, except that I use a small onion rather than a leek! ;D The leek has a more delicate flavour, which doesn't mask the salmon
