Currently cooking the sauce for tonights curry
2 tins chopped tomatoes tin coconut milk small tub double cream 3 tsp curry paste of your choice 3 garlic cloves finely chopped 1 chilli...prepared how you like it 1" cube grated ginger 1 tsp cumin powder 1 tsp turmeric 1 tsp corriander squirt lime or lemon juice squirt runny honey
Will also add creamed coconut and/or pinch or two of brown sugar to sweeten.
Just bung it all in a wok and simmer until reduced to a nice, thick sauce. Add or take away anything from the list to your taste.
Tonight, i will stir fry some diced chicken breast in olive oil with garlic as well as a chopped onion, chopped pepper and some mushrooms. Pineapple can be added too if desired.

Yum, I can smell it already. I love using coconut milk and creamed coconut. But double cream too, that is soooo decadent, but heavenly too! Do you reckon the recipe will catch on with Weight Watchers andy?

Yum again, can't see anything wrong with that! Doesn't do any harm to have a mad week now and again - Thursday mega Indian takeaway, last night fish and chips, hubby's just gone to get some wine and I can't get into the kitchen to do anything anyway as he's taking the ceiling down looking for a pipe, plasterboard and bits everywhere, so it doesn't bode well for tonight either..........but we are both quite good cooks, believe it or not!

Well i've changed my mind about tonights take away....i've just been to tesco and bought a couple of plain pizza bases to which i will add garlic butter followed by sliced peppers, mushrooms, onion, sweetcorn and pineapple....then covered in oregano !!!!

Hope you're having some garlic bread with that. My garlic bread, the children love it, although there's probably more garlic in there than bread. ;D
