Hi Isabella Had a go at beetroot and apple relish today and will be making some more. 500g grated apple 500g grated beetroot (got pink hands ) 500g chopped onions 1 tbsp chpped ginger or 1 large tsp ginger powder a couple of chopped chillis 2 large cloves of garlic crushed. 1 tsp cinnamon 250g dark soft brown sugar 450ml red wine vinegar everything in a pan for approx 1 - 1 1/2 hours. or how about spiced apple butter 1.25 kg apples (chopped including skins and cores) a cinnamon stick grated nutmeg juice of a large lemon 600ml water approx 650g sugar everything except the sugar in a pan and simmer for an hour sieve and add 375g sugar to 500g puree simmer until sugar is completely dissolved (good idea to keep stirring) Increase heat and boil hard for approx 20 - 30 mins until reduced by half and is thick and creamy. Store in cool dark place for a couple of months

Hi Pam
Hope I'm not too late with this recipe, it's a tomato and apple chutney, I've just made 8 jars!!
1 1/2 lbs tomatoes, skinned and chopped 1 1/2 lbs apples, chopped 8oz onion, chopped 3/4 pint distilled vinegar 1 1/2 teaspoon salt 4oz sultanas ( I only had raisins..what the hell !!) 2 teaspoons fresh grated ginger (or ground) 14oz demerara sugar
I also added a couple of chopped de-seeded chilli and some garlic
Put everything into a pan, boil and then simmer until it all thickens, in my case this was about 1 1/2 hours. It does need stirring quite frequently as it thickens. Pour or ladel into warm, sterilised jars and seal. Makes about 2 1/2 pints, and looks pretty damn good!! ;D

Thanks GH, I will give it a go!
I made the beetroot, apple and ginger chutney and it is delicious - will probably be even better if I can leave it for a while!
I am going to make jlotties Apple Butter ,too!
It's funny but I got out of the habit of making Chutney but reading the recipes has spurred me on to have another go!
Thanks again Pam

Glad the Beetroot, Apple and Ginger was a sucess. I was given some Damsons from someone at the allotment so I've done a chutney with them too....the OH is spoilt for choice with what to put in his sandwiches!!!
