Especially for Skarloey... ;D 'How to be Mrs Beeton' 8oz apples - chopped 8oz raw beetroot - peeled and chopped 8oz green tomatoes - chopped 8oz onion - peeled and chopped 2cloves garlic - chopped 4oz raisins 1 tablespoon ground ginger 1teaspoon ground allspice 1 teaspoon salt 1/2 pint distilled malt vinegar 6oz demerara sugar Clean and sterilized jars ( which you can do by putting them into a warm oven) and those little wax disc's to cover the top of the chutney before you put the lid on!! Put everything in a very large saucepan, slowly bring to the boil and then simmer for about an hour, stirring occasionally - until all vegetables are tender (beetroot will take longest to cook). Increase the heat slightly for the final 10 minutes to reduce the liquid and thicken the chutney. Allow the chutney to cool slightly and then spoon into the sterilized jars, wipe jars clean and cover with the wax disc. When completely cold put the lid on. Store in a cool, dark place for up to 3 months (may actually last longer than that). Refrigerate once you've opened it. Great with cheese and should make about 2 1/2 lbs Best wishes GH

Hey GH, OH loves all types of relish/chutney type thing and I told him about this one and he almost drooled. I don't have all the ingrediants at the mo but as soon as I make it, I'll let you know. BTW have you found the allotment board yet? Skarloey.

Hi, just wondering if there are any chutney experts on line.... I'm in the middle of making the chutney and now realise I am going to have more chutney than jars. So I was wondering, can I put some in pots and freeze it? Feel free to laugh if this is a really stupid question. Skarloey. (AKA Mrs Beeton - not!) ;D

Hi again, Don't worry about the freezing question as it was only 2 pots worth and we've managed to eat half a pot already!!!! Now I'm not normally a pickle/relish/chutney kind of girl but I can't get enough of this stuff!!! It's delicious! ;D I'm definitely going to be growing beetroot next year.
