I find it best to boil the can the day before I really prefer this with a thin biscuit base - less trouble than making a pastry case, too Banoffee Pie 40mins plus 3 hours boiling Serves 4 Ingredients 175g/6oz Shortcrust Pastry 1 x 400g/14oz tin Condensed Milk (not evaporated) 3 Large Bananas 360ml/12fl.oz. Double Cream ½ teasp Powdered Instant Coffee Instructions 1. Place the unopened tin of condensed milk in a large saucepan, cover with water, bring to the boil then continue to boil for at least 2 hours, topping up with extra water as necessary. IMPORTANT – make sure the pan is topped up with water otherwise there is the chance that the tins may explode causing danger and damage. NB As this is a lengthy process, why not boil several tins at the same time. Once boiled, the unopened tins keep indefinitely, ready for when you want to make this dessert again…..and you will! 2. Once the boiling process has taken place, allow the tins to cool completely before opening. DO NOT OPEN WHILST THE TIN IS WARM. 3. Preheat the oven to 190C, 375F, gas mark 5. Roll the pastry out on a floured surface and use it to line a 25cm/10inch flan tin. Prick the base all over with a fork and bake blind until crisp. Allow to cool. 4. Once the tin of condensed milk is cold, open and stir the soft toffee filling. Spread the toffee over the base of the flan. 5. Peel and slice the bananas and lay them on the toffee filling. 6. In a bowl, whisk the cream together with the instant coffee until thick. Spoon or pipe the cream over the bananas and chill until ready to serve.

I use exactly the same method except that i cheat and buy the pie case....and i add a broken up flake to the top.

T**scos sell preboiled condensed milk specifically for Bannoffee pie....... for those who are a bit scared to boil an unopened tin, and for Cheating on the time it takes! I love Bannoffee pie but darent make it, OH has high everything it seems!........ Christmas on a diet, Oh Joy

Oh well just a thought, I cant say anyway, if OH doesnt get blood pressure, weight, cholesterol, down it may be some years before I can eat nice things again

I boil up enough cans for 2 pies at a time but you do have to be careful to mark the cooked but unused ones clearly.
I have a friend from Colombia where they use a lot of boiled condensed milk and cook it in the microwave but you don't get the toffee colour - empty the 400G/14oz tin into a deep bowl as it will bubble up when it boils. Microwave on full power for 4 mins and again at 70% power for 4 mins. I do banoffie pie for the Belgians who almost swoon. I buy ready made, ready rolled shortcrust or sablé pastry made with butter.

You can now buy Caramelised Condensed Milk by I think its Carnation - lovely, Morrisons sell it, saves the hassle of boiling the can.

Just bought some Carnation Caramel from Tescos - haven't tried it yet, will let you know what I think to it once I have www.nestlepromotions.co.uk/pno/apr2006/index.htmlIs that what you recommend Sweetleaf? The one I tried a few months ago wasn't made by Nestle BTW

Thats the one, Rita, I tried a slice of a friends Banoffee pie and she admitted she used it.... I couldnt tell the difference it was yummy! I Dont dare mention it to OH though

£1.20 for a tin of condensed milk and £1.68 for the preboiled. ;D
Touch wood - I haven't had an accident so far - the preboiled stuff saves the hassle of watching a saucepan for about 3 hours which is great ;D

Remember everyone, Sweetleaf has renamed Rita's Banoffee Pie - 'Lemon Merangue Pie', and it's now made with Lemons instead of bananas, and merangue instead of toffee.
Hmmm... that is confusing Sweetleaf. Rita doesn't get the credit.
How about calling it Rita's Banoffee with lemon and merangue and no bananas and no toffee Pie
