Got any spare courgettes? ;D ;D ;D
Just made my first lot courtesy of Gardenhammerette over the 'other side'. I've changed it slightly though. It's delicious.
2lb courgettes - chopped 12oz potatoes - chopped quite small 1 onion - chopped 2 pints veg stock 8oz Brie minus the rind - chopped into bits Salt and pepper
Soften onion and potatoes in a pan over low heat for a few minutes. Add the courgette and cook for further minute or two. Add the stock and seasoning, bring to the boil, turn the heat down and simmer for 15 minutes. Remove from heat add the brie and let it melt in. Leave to cool a little. Liquidise(ze?) and check the seasoning. Eat!!!!

Hi 4P It really is delicious but you can certainly taste the Brie and it is quite rich. I'll try it on my 15 year old and let you know how she likes it. Skarloey. ;D

The problem with any soup based on Courgettes is that as Courgettes have very little flavour they are used mainly as a bulking agent. The flavour is provided by any of the other ingredients. I guess this soup would taste just as good without the Courgettes. I tried a Courgette and Carrot soup but because of the carrots, added potatoes, onions and stock, the Courgettes may as well have not been there. Is there anything available which will enhance the flavour of Courgettes other than eat them raw like an apple.

Nutrition
The zucchini fruit is low in calories (approximately 15 food calories per 100 g fresh zucchini) but contains useful amounts of folate (24 mcg/100 g), potassium (280 mg/100 g) and vitamin A (384 IU [115 mcg]/100 g) . For zucchini read courgette, so although relatively tasteless as toadspawn says, they are nutritionally valuable Tell that to the people you give them to!

Totally agree with you toadspawn, the only good thing I can say about courgettes is they are easy to grow and you get a good crop. The question for me is why grow something that has so little flavour?

Courgettes are great when grilled with olive oil and garlic or as part of roast mediterranean veggies.
They are also very good in cakes, just like carrots. I have a wonderful recipe for courgette and apricot cake and several others I haven't yet tried.

Courgettes are also quite delicious in ratatouille.
In my courgette soup I tend to add Gorgonzola, it adds a bit of a sharp flavor.
I grew my courgettes in pots this year but saw the crop was a lot smaller than when I grow them in full soil.

I made this soup on saturday and by request I made it again today a total success! I didnt have any brie today, so used strong cheddar, and served it with chunks of crusty bread. I thought I`d never get through the vast amounts of courgette I`ve been bringing home but I appear to have run out
