Just thought I'd share this around - as long as you have a few basic SE Asian ingredients, it's the easiest recipe ever and great when people come by unexpectedly. Here goes ...

Serves 2-4 depending on appetite
Ingredients: Vegetable or peanut oil 1 lb stewing beef pieces, approx. ¾ inch 1 tin coconut milk, left to stand so that thick part rises to the top 6-8 dried lime leaves Curry paste – any (green, red, any other) SE Asian fish sauce - but not essential Sugar Water
Heat heavy-bottomed pot. Add four tablespoons of thick coconut milk from top of tin. Once that has heated, add two tablespoons oil, curry paste to taste (I use a generous teaspoon) and lime leaves. Cook on medium heat until the oil seperates and a nice smell develops. Then add the meat, stir to coat, and cook for a few minutes. Then add the rest of the coconut milk, rinse out tin with approx. 120 ml water and add that, add 2 tablespoons fish sauce if you have it and 1 teaspoon sugar. Bring to boil, reduce heat and simmer very gently until the meat is cooked. That’s it.
