I've just sent this recipe to a friend of mine and thought some of you might like it as well:
Mother’s Cherry Almond Cake
8oz Caster Sugar 8oz Butter or margarine 3 Eggs 8oz Plain Flour ½ tsp Baking Powder 4oz Ground Almonds 4oz Cherries (more if desired!) Almond Essence Little Granulated Sugar Salt
Preheat the oven to 140ºC or Gas Mark 1
Grease an 8inch round cake tin
Cream the butter and the sugar. Add the eggs and a little flour, baking powder and a pinch of salt and mix well. Add the ground almonds and sieve the remaining flour. Mix well. Add the cherries and almond essence and stir gently. Pour the mixture into the cake tin and bake for 2½ hours.
This cake improves with keeping.
