Hi All, In Belgium we do not use "ginger" so often. Yesterday I cooked a Biryani for my guests, including some ginger. But now I have a lot of ginger left in the fridge. Any good ideas?? It seems a waiste to throw it away. Thanks Anneliesje

I like a nice hot mug of ginger tea. Just peel & put a few slices in a mug & pour boiling water over them. Leave for about 5 mins. Also lovely with honey or lemon or both. To save it going off you could peel it & store it in the freezer ready for use. Janet.

I use ginger if I am cooking Chinese food and there is always a load left over and I used to waste it until I started peeling it and dicing it and freezing it.
Just make sure that you put it frozen into whatever dish you are cooking. Also you can use just as much as you want and put the rest back in the freezer.

You could of course plant it, makes a nice enough plant, and you can harvest the root later.

Hi Anneliese ... why not try Ken Hom's Beef with Ginger and Pineapple. Yummy: 1 lb beef pieces 1 tsp salt 4 tsp Chinese rice wine or sherry 4 tsp sesame oil 11/2 tsb cornflower 8 oz fresh or tinned pineapple 2 red pepper 2 spring onions 2 tbsp oil 2 tbsp shredded or chopped ginger 1 tbsp water 1 tsb light soy sauce
Cut beef in thin pieces and put in bowl, add salt, 2 tsp rice wine, 2 tsp sesame oil and cornflower; mix.
Cut pineapple into thick slices, discarding core. De-seed peppers and cut into wedges. Cut spring onions into 3 inch lengths.
Heat wok/frying pan, pour in oil. Add beef and stir fry for 1 minute to brown. Remove beef and set aside. Add ginger, peppers and spring onions to wok, stir fry 1 minute. Pour in water, remaining rice wine, soy sauce and cook for 3 minutes. Drain juices from the beef into wok and add pineapple. Return beef to the wok and cook until beef and pineapple are heated through. Add remaining 2 tsb sesame oil, stir a couple of times and cook for 1 or 2 minutes more.
Eat.

Hi Anneliesje I have an original copy of Mrs Beeton's Cookery Book - written I think about 1869 It was written for All Mistresses and Servants And you do have to check with Cook that she has the ingredients There are some interesting recipes using ginger including:- Ginger Beer - cost in those days was 1s 3d which I cannot possibly remember how to convert into English pence Ginger Biscuits makes 4 doz Ginger Pudding Gingerbread Gingerbread Nuts Ginger Wine If any of the above tempt you let me know and I will type up the recipe <hug> Jenny Wrenn x
