2oz butter or marg 2 onions chopped 1 cooking apple, peeled and chopped 1 oz flour 1 level tablespoon curry powder half teaspoon ground ginger half teaspoon cinnamon half pint milk quarter pint chicken stock 1 level tablespoon mango chutney salt and freshly milled black pepper 12 oz cooked chicken, chopped
1. Fry onion and apple in butter or marg until soft.
2. Add the flour, curry powder, ginger and cinnamon. Cook gently for a few seconds before blending in the milk and stock.
3. Stir in the chutney, salt, pepper and chicken. Bring to the boil and simmer gently for 20 mins.
Serves 4 – or 2 in our house!!!!
