First year growing these, so I am still experimenting on the best ways to cook them. So far, I have found that lightly stir frying them seems to be the most acceptable, the tubers stay crisp and are a good substitute for water chestnuts. I have seen them used in soup, not tried that yet, but I am definitely a soup man, so that will be on the cards shortly ..
