EGG-FREE, DAIRY-FREE, NUT-FREE CAKE
1 ½ cups all-purpose flour ½ teaspoon salt 1 cup white sugar ¼ cup unsweetened cocoa powder 1 teaspoon baking powder 1 teaspoon baking soda 5 tablespoons vegetable oil 1 tablespoon white vinegar 1 teaspoon vanilla extract 1 cup cold water ½ cup semi-sweet chocolate chips
Preheat the oven to 175C / 350F and grease an 8x8 inch baking tin.
In a large bowl, combine the flour, salt, sugar, cocoa powder and baking soda. Mix well with a fork, then stir in the oil, vinegar and vanilla extract. When the dry ingredients are thoroughly moistened, pour in the cold water and stir until the batter is smooth. Stir in the chocolate chips and pour the batter into the prepared tin.
Bake in a preheated oven for 30 to 35 minutes, until a toothpick inserted in the centre comes out clean. Cool on a rack.
A good topping for this cake is:
100g plain chocolate 3 tablespoons caster sugar 1 teaspoon vanilla or orange essence
Melt the ingredients in a pan and stir until smooth. Pour over the cooled cake and allow to set.
