Mother’s Cherry Almond Cake
(This recipe works well with gluten-free flour and gluten-free baking powder as you don't need to add any extra liquid to compensate)
8oz Caster Sugar 8oz Butter or margarine 3 Eggs 8oz Plain Flour ½ tsp Baking Powder 4oz Ground Almonds 4oz Cherries (more if desired!) Almond Essence Little Granulated Sugar Salt
Preheat the oven to 140ºC or Gas Mark 1
Grease an 8inch round cake tin
Cream the butter and the sugar. Add the eggs and a little flour, baking powder and a pinch of salt and mix well. Add the ground almonds and sieve the remaining flour. Mix well. Add the cherries and almond essence and stir gently. Pour the mixture into the cake tin and bake for 2½ hours.
This cake improves with keeping.

No Bake Chocolate Cake.
10oz pkt rich tea bisc. crushed. 4ozs butter or marg. 600grms chocolate. (I use the twin packs of galaxy) but any nice choc will do. 1 397 grm tin of condensed milk.
Line a 2ld loaf tin with baking parchment. Melt the butter & condensed milk over a low heat until it starts to thicken (it changes colour) stirring all the time. Add 150 grms of chocolate stirring until it has all dissolved. Mix in the crushed biscuits. Pour into the lined tin & put in the fridge for a couple of hours or overnight. Melt 150 grms of choc & pour over the chilled cake & put back in the fridge. Plocket I have given this recipe to several people (daughters included) & they say the cake doesn't set. The secret is in the first stage. The mixture must thicken. This is definitely a bowl licking recipe. I hope you all enjoy it. Do you like savoury? Salmon Puff. Basically tinned salmon, cooked rice & boiled eggs in a puff pastry case. Dead simple but looks & tastes amazing. Let me know if you would like it. Daughter no 2 lived off salmon puff & chocolate cake after she had the baby. I think it reminded her of home when she was struggling with motherhood after such a bad time. Actually I do a similar no-cook cake which we call refrigerator cake. It's got a bit more in it than yours though so I'll give your's a go. But what happened to the other 300 gs of chocolate??? Do you get to eat it? The salmon puff sounds lovely - yes please. If you post the recipe on a new thread then others might find it more easily!
