This recipe is a family favourite! You don't have to use spare ribs - tonight I am using Pork shoulder steaks! 11/2 lbs meaty pork spare ribs 1 onion ( finely chopped) 1 tablespoon brown sugar 1 tablespoon Worcestershire sauce 2 tablespoons vinegar ( malt will do) 1teaspoon mustard(english) 4 good tablespoons tomato ketchup 1 tablespoon oil Put the spare ribs in a roasting tin and sprinkle with salt Cook for 30 mins. on middle oven shelf Gas no. 6 Whilst the ribs are cooking make the sauce; Cook the onion in the oil in a small saucepan until transparent but not brown Add rest of ingredients and bring to the boil When the ribs have had 30 mins. cooking pour away any liquid in roasting pan Spoon sauce over ribs and cook in the oven Gas no.4 for 1 hour They don't come to any harm if left longer than this - just keep an eye on them! Serve with whatever you fancy! Enjoy!!!
