Hi all We are inviting people round here more this christmas, rather than dragging the children out Christmas day and boxing day. I'm not too worried about cooking christmas day, as I'll make sure my mum provides and cooks most of it ;D . But on Boxing day we will be having OH's crowd round. Has anyone got any good ideas for buffet style food that goes down really well at crimbo? I'm used to doing the usual bits and bobs [sarnies, quiche, sausages etc], but was looking out for special little touches! [the simpler the better - like me.... ]

Homemade coleslaw
White cabbage....roughly chopped Grated carrots Red onion, finely chopped Mayonaise Lemon juice Sultanas Apples....finely diced
Mix all together in the quantities you like

Honey roasted potatoes....
New potatoes....par boiled for 10 mins then put in a baking tray and drizzle with olive oil and runny honey. Bake at 200c for half hour, turning occasionally

Yorkshires with gravy dip (best served hot)
120g plain sifted flour 2 eggs 300ml milk
Mix above vigorously with whisk and put in fridge Meanwhile, put about 5mm oil in the bottom of your yorkshire tins and put in a very hot oven until oil is very very hot Add batter mix to the tin and cook in oven (200c) until crispy. Don't open the door during cooking !!! Serve with a gravy dip

Pasta salad....
Basically boil up some pasta and put in a big bowl. Then add whatever you want......i add chopped peppers chopped onion mushrooms peas sweetcorn finely sliced pineapple lemon juice oregano I then mix it all up with some mayonaise

My fave is home-made coronation chicken (shout if you want a recipe) and a really tasty but unusual salad is made up of raw mushrooms and emmenthal cheese with cream - not for slimmers but really yummy! And another nice salad if you want that sort of thing is mozzarella, sunblush tomatoes and basil leaves with pine-nuts. All can be made the day before and kept in the fridge.

Well I'm certainly getting hungry! Thanks everyone, some really helpful ideas, I will have a sit down and try to start getting organised. I will definitely try home made coleslaw Andy - nice one! Plocket can I ask a silly question - can your chicken dish be served cold in wraps? I haven't eaten meat for 20 years, so you'll have to excuse my ignorance! Isabella can I ask another silly question - is jewelled rice rice with 'bits' in [peppers, sweetcorn etc]? I was going to cheat and get some home made styley bought mushroom soup in a slow cooker on the table as well, but I would really love to do as much of it myself as I can. As for the very helpful chaps who so kindly suggested M&S ........just 'cos I live in the Southeast it doesn't mean I can afford to shop in them there posh shops! ;D

Hello Jonah,
This is how I make my Rice Salad
8ozs cooked rice
1 red pepper -small cubes
1 bunch spring onions chopped Or 1 small red onion chopped
small tin sweetcorn drained
1 tin kidney beans rinsed and drained 1 tin cannellini beans rinsed and drained
1 cup frozen peas just cooked
1 cup mixed raisins and sultanas - I usually pour boiling water over them then rinse them in cold water - it gets rid of the gunk on them!
Dressing
Juice of 2 lemons
2-3 tablespoons White wine vinegar
4-6 tablespoons sunflower oil
sugar,salt and black pepper to taste
Sorry the quantities aren't exact for the dressing but I just mix and taste until it is right!
Mix everything together,pour over the dressing,give a good stir and store in the fridge until needed - makes a big bowlful!!!
Just had another thought-
Little filo parcels filled with onion,courgette,tomato and aubergine and served with a spicy red pepper sauce are delicious!
And another
Homemade Hoummous and bread sticks etc.

Hia Jonah! The Coronation Chicken IS cold and absolutely delicious in wraps!
CORONATION CHICKEN
(for 8 as a main course)
2.3 kg (5lb) chicken, poached (you can use left-over turkey!!!) 15 ml (1 tablespoon) vegetable oil 1 small onion, skinned and finely chopped 15 ml (1 level tablespoon) curry paste 15 ml (1 level tablespoon) tomato puree 100 ml (4 fl oz) red wine 1 bay leaf juice of ½ lemon 4 canned apricot halves, drained and finely chopped 300 ml (½ pint) mayonnaise 100 ml (4 fl oz) whipping cream salt and pepper
Remove the flesh from the chicken and cut into small pieces. In a small saucepan, heat the oil, add the onion and cook for about 3 minutes, until softened. Add the curry paste, tomato puree, wine, bay leaf and lemon juice. Simmer, uncovered, for about 10 minutes until well reduced. Strain and leave to cool.
Puree the chopped apricot halves in a blender or food processor or through a sieve. Beat the cooled sauce into the mayonnaise with the apricot puree.
Whip the cream to stiff peaks and fold into the mixture. Season, adding a little extra lemon juice if necessary. Fold into the chicken pieces.
I put the finished coronation chicken into the fridge to cool further, and it’s also nice to not puree all the apricots, but leave some chunky for texture.

Wontons (or parcels)
Get some Filo pastry...about 4 sheets on top of one and other is about right Cut into 5" squares add your filling fold the corners in and make the parcel secure....."glue" together with eggwash bake in oven for 15 mins or deep fry for a few minutes
Among my favourite fillings is brie and cranberry, and blue cheese with apricot jam.

I've got a big surprise party for my mum in January for her 65th. All the family will be there as will loads of friends and it's me and my sister who will be doing the food. Unfortunately, she lives some 350 miles away in County Durham so it's down to me to organise the food....although she will be coming down a few days before hand to help.
I will be doing all the above stuff....including plockets wonderful coranation chicken and isabells pinwheels. In addition, i will be doing......
Miniature homemade quiches (cooked in deep muffin trays) Pizza Sausage rolls Pork pies Potato salad Rostis Green salad Scotch eggs Vol au vents spring rolls

Iceland. Their party food is quite good, we're having it tomorrow night and again for new years.
Anyway, there's a nice dip that can be made with natural yoghurt and honey. Just swirl the honey thru a dish of the yoghurt and make crudites or whatever they're called of fruit. Low fat etc too that is! And bloomin tasty.

If you look at the ingredients of most of the supermarket dips, their base is either mayonaise or greek yoghurt.
Just add stuff to it.....honey and lemon, curry powder, cheese and chives, garlic and coriander etc etc

I make a nice salad with Apple Applewood smoked cheese/your favourite cheese Celery Cucumber Tomato Mayonnaise Mustard if required to taste
simply cut everything into small pieces about the same size and stir into mayonnaisse...very simple and delicious, my mums favourite..... Make loads as it soon disappears!

At Sainsbury's yesterday they were selling whole salmons for £1.75 a kilogram. They chopped one into steaks for me and I've frozen them. A whole salmon came to £2.45!
I baked two steaks in the oven today with a little olive oil and a knob of butter and served with steamed asparagus (on offer at Asda) and a slice of bread and butter - mmmmm... delish!

Tempura
2 tsp plain flour 2 tsp cornflour enough chilled fizzy water when all mixed together to make a batter the concistency of double cream.
Mix into batter
coat various vegetable portions in batter...eg strips of carrot or courgette, brocolli, spring onions, tomatoes, peppers etc
Deep fry in hot oil until crispy
Serve with a chilli dip
