Used goose fat for roasting potatoes for the first time this Christmas - they were superb, best ever ;D

Used goose fat for roasting potatoes for the first time this Christmas - they were superb, best ever ;D Strange Rita.....i know that all the top chefs etc recommend using goose fat but i went out and bought some (nearly 3 quid for a jar !!!) and my roasties just didn't do well. Maybe it was just a one off and i've been a bit reluctant to do any since. It's the same as using King Edwards.....i always find i do better, crispier spuds with Maris Piper.

I always use King Edwards for roasting, - I prefer the flavour. Do you parboil for 5 mins then once drained shake them really well in the saucepan?

I do enjoy small roasties though...almost to the point of small cubed saute'd potatoes. But over christmas, i did some small ones with garlic and rosemary but i also did some large roasties for people who prefer bigger, plain spuds and the bigger ones where truly a sight to behold !!!!!....i nearly framed them ;D

It was the first time I'd done my roasties in goose fat and, I couldn't believe the difference!! My roasties have always had a good reputation but, it made such a difference!! S xx

Ooooh I love roasties cooked in goose fat but as CC says they have to be cooked REALLY hot! Whatever spuds you use, boil them first, shake them a bit in the colander when you strain the water off and then put them in hot fat for roasting. Delicious!!!!!

Nigella had a christmas cookery programme & she did them in goose fat. Even though OH was recording it he said we had better watch it (footy on the other side). We had to keep watching it to make sure I knew what to do. Only been married for 39 years. Can anyone explain it to me. Janet.

Just use it in place of whatever you would usually use for roasting your potatoes
