I'm entertaining my bosses on Wed night to celebrate Mrs Boss's birthday!
Can anybody please suggest an easy starter that I can make in advance that doesn't contain cheese or seafood!

Baked stuffed avocados? They are basically stuffed with the avocado, tomato, and stuff like that. Let me know if you are interested.
Stuffed mushrooms - use large mushrooms and remove the stalk. Stuff with pate of your choice then dip in egg, then breadcrumbs and deepfry at the last minute.
Make an olive tapinade and put it along with a thin slice of tomato onto small pieces of French Toast. If you get everything ready - one plate with the tomato slices and tapinade on top, and another plate with the French Toast ready, you just put the two together before serving.
Or how about parma ham and melon? Use the really sweet little gala melons and cut the slices prettily. Prepare it all in advance, including a drizzle of olive oil and black pepper, and serve cold straight from the fridge.

By the way, if you don't like the Doritos idea, how about pringles ?
What are you doing for the main course ? I suggest lots of beer followed by a kebab with chilli sauce & salad. Always goes down well.

However, Mr and Mrs Boss are the most boring eaters that I know Any suggestions of soup perhaps

Waddya think Lotts....................about M&S Go for the M&S Minestrone soup (give 'em a taste of summmer) with some nice crusty rolls, do a roast and then Lemon Meringue or Apple pie for pud. I M&S!

Mains - Heinz Alphabetti spaghetti Dessert - An old mince pie Cheese board - Own brand cream crackers still in their packet with Laughing Cow cheese spread. You will need to open the crackers now in order for them to "air" so that they are as soft as the cheese. Coffee - Baldrick's WWI (Black Adder) coffee, preferably his cappuccino version. and voila.....the pay rise is on its way

Soup suggestions - how about French Onion soup? It's delicious and very easy. Fry a nob of butter and finely chop some large white onions (probably three). Fry them up gently until they are translucent then add a desertspoon of sugar. This will help brown and caramelise the onions. Then add about 1pt of stock (all this is my guessing because I just do it as I go along) and simmer gently. I serve it with french bread that you toast on one side, then turn over and melt gruyere cheese or emmenthal on but if they don't like cheese you'll have to miss that off. Croutons are nice - chop up some bread into small cubes and fry in 50% butter and 50% olive oil. If you want to be REALLY healthy toast the cubes under the grill.
Or how about leek and potato soup? Carrot and corriander? Carrot and orange?
For each of them, fry up a small onion, chop in the veggies(three leeks and one large potato) (three large carrots) (not the corriander or orange if you are doing the carrot soups), season and add about 1 1/2 pints of chicken or vegetable stock then simmer until the veggies are cooked. For the carrot and corriander, add the herbs then blend. Reheat before serving and put fresh corriander leaves on top as garnish. With the leek and potato, blend and reheat before serving and you can put some parsley or something on top. With the carrot and orange (my fave of the three) add the zest of one orange, then blend. Add the juice of the orange when you reheat and swirl a bit of cream on top, then add a bit more zest on the cream so it shows up. Very tasty - all three, but the quantities are entirely guessed as I write!!
Chicken and sweetcorn is nice too - fry up an onion, add chicken stock, lumps of cooked chicken and a small tin of sweetcorn plus liquid. Blend if you want a thick soup or serve as is.

Hiya P ...........the dinner party is on Wednesday night..........bless ;D! Pretty please....................can I have your lovely recipe for the baked avocados ;D ;D. Mr and Mrs Boss are VERY plain eaters (prawn cocktail, roast, trifle sort of people), but maybe it's only because they haven't tried anything else. What would you do Plocket? S xx

I'd serve what I like and hope they like it too. The avocados are different but not outlandish!!!
Baked Stuffed Avacados - Serves 4
4 medium, just ripe avocados 1 tablespoon lemon juice 1 tablespoon olive oil 4 shallots, finely chopped 2 oz cashew nuts, chopped 1 oz white breadcrumbs 2 firm tomatoes, skinned and seeded (though I don't bother!) and chopped Black pepper 1 oz freshly grated parmesan cheese 2 tablespoons fresh basil
Halve the avocados, scoop out the flesh, reserving the shells. Dice the flesh and toss in the lemon juice. Heat the oil and saute the shallots and cashews for 3 minutes. Add to the avocado with the remaining ingredients. Divide between the shells an bake at 200 degrees c / Gas mark 6 for 10 minutes and serve immediately.
Keep the stones in case you want to prepare this in advance. If you put the stones near the raw avocados they will help stop the flesh from going grey. Ensuring that the flesh is well coated in the lemon juice should also help.
For a starter you might want to just do half an avocado per person.

Thanks folks! Last night went perfectly, although it was quite a rush as I'd only just got back from visiting my brother in Keswick and only left myself 2 hours to prepare Plocket's lovely avocado's for starter, chicken breasts in white wine and dijon sauce, roast new pots, asparagus and baby carrots followed by fresh fruit salad (tropical) and cream or ice-cream! Even though I say it myself, it was yummy! S x
