Just made this. You will need
Fruit of your choice...i used two apples and two pears. You can also do peach and raspberry, Necterine and pineapple, banana etc.
100ml of water 200g caster sugar 50 g butter
Sultanas
Sheet of ready made puff pastry
Method.....pretty simple really.
Put the sugar and water in a saucepan and simmer until caramalised and golden.....do not sir during this process.
Once golden, add the butter and melt in the sugar/water mix
Cut up the fruit into small pieces and put in a oven proof dish and also add the sultanas. I sprinkled mine with cinamon at this point too.
Pour the caramel mix over the fruit
Put a sheet of puff pastry over the top....losely (do not seal it round the edges)
Bake in the oven at 200c for 25 mins or until the pastry is golden.
Allow to cool until just warm before turning upside down onto a plate (so the pastry's at the bottom now)
Eat with whipped or clotted cream
Took 10 minutes to make.....i'll let you know what it tastes like once it's cooled down.
