Made these the other day, mmmm.
Basically you need Spinach, Raisins, Filo Pastry, Feta Cheese, Riccotta Cheese, Pine Nuts, touch of pepper and melted butter.
I don't go in for measurements and this recipe can have more cheese than spinach or vice versa depending on your taste.
Wash and wilt the spinach, leave to cool and chop roughly, add to a mixing bowl with the raisins, pine nuts (or sunflower) and a touch of pepper. Add to the bowl the Feta, this is quite flavoursome so add according to taste, and the Riccotta and mix. Basically you are looking at a 50/50 mix of Spinach and Cheese but alter as you see fit.
Get two pieces of filo and add melted butter to the edges to enable it to stick. Add the mixture into the centre and roll into a triangle or parcel shape, add a touch more melted butter to the topside. Repeat until you have run out of mix or filo ;D You need two pieces of filo so the ingredients don't break out when cooking
Slip in an pre-heated oven, say 200 degrees celsius, and keep an eye on them. Remove once they start to brown round the edges and serve. It takes about 30 mins from getting the ingredients out the cupboard to eating.
Very easy to make and very easy to change to suit tastes. I imagine mozzarella and basil would be nice instead of spinach/feta. I think I might make some smaller parcels with a cherry tomato, bit of pancetta/bacon and a basil leaf or two.
