Just two roasts that we love.
Pork Loin with Mustard and Bacon for 4 people.
1kg Pork Loin
Bacon Onion Mustard Black Pepper
Pork Loin with the bone taken off (I roast the bones alongside the roast and it is finger food for the Chef!!)
Cut a pocket in the meat and fill it with diced bacon and onions which have been mixed together with a good teaspoon full of mustard and black pepper. Close with a cocktail stick or fine skewer.
Then rub Mustard all over the outside of the meat and leave for 24 hours.
Roast as usual.
Tip:
I put it into a hot oven and when I reduce the heat I add whole onions. You can also add potatoes and vegetables if you wish.

Roast Pork with Rosemary and Garlic for 4 people.
I kg Pork Loin
4 cloves of garlic and 3/4 whole heads of garlic Chopped Rosemary Salt and Pepper to taste Little oil
Dice the garlic cloves and mix together with the chopped Rosemary. Add salt and pepper and rub all over the meat. If you wish you can spread mustard over the top of the meat and then sprinkle the garlic/rosemary mixture on top.
Put the meat into a roasting tin, bone side down. Cut about a quarter off the tops of the whole garlic heads and drizzle a little oil on top of them.
Roast uncovered until done.
Don't be afraid of the amount of garlic - it is delicious.
Tip:
Add new potatoes around the pork in Spring.
In winter add the roasted garlic to mashed potatoes or vegetables.

Sounds delish RF. OH makes a slit in the meat and pokes the garlic cloves in them. Love garlic ;D

We love garlic too we have found a really nice sauce to put with pork which is very easy and mmmmmm . Boil 2 or 3 garlic cloves in a small amount of water untill soft. Then add garlic and the small amount of water it cooked in into stewed apple ( if its nice stewed apple you don't need any sugar) puree all together and serve with pork. Enjoy!
