My friendly neighbour gave me a lovely yellow squash but I don't know what to do with it as I have never cooked on before any ideas would be welcome.

Is it a butternut squash robin? They are delicious peeled,cut into chunks,sprinkled with olive oil and roasted Some could then be made into a delicious soup

Hi Robin. It looks like butternut to me. I'm growing some at the moment. - Can't wait to eat them straight from the garden. ;D instead of from the shop. All we do with ours is put some olive oil on them and salt & Pepper and roast them for about 30 mins in the oven - Beautiful. Oooo Just thought I have bought somw quiches tonight - another bargain with butternut squash Guerue (sp) cheese - never tried them but looking foward to finding out. I hope you enjoy the squash. - whichever one it is. Alicat.

goodo....my Dad's neighbour has a market stall and he gave me a butternut squash this morning!
guess what we're having tomorrow for tea! ;D

Ooooh butternut squash is GORGEOUS!!!
Another idea is to cut it in half lengthwise and take out all the seeds. Roast it in the oven for about an hour with foil over to stop it drying out, then fill it with crumbled feta cheese for about the last 15 minutes of cooking time. When you take it out of the oven chuck on some roasted pine nuts and torn up basil, then drizzle with a bit of olive oil. Delicious!!!

You could try making soup. It's easy and very, very delicious and looks fabulous. If you dont like it sweet though, avoid, cos it does taste sweet. Chop up a large onion and soften it in a dessertspoonful of proper butter. Peel and chop the squash into smallish pieces (this is the hardest bit). When the onion's soft, add the chopped squash to the onion and soften. Then add 1 pint of stock (chicken, veg., whatever you fancy). Simmer until the squash has 'pulped'. Take off the heat and blend to a puree. Season to taste. Add cream if you wish.
Absolutely delicious.

I should have said that you fry the onion in the butter. I'm sure you knew that but just to make it clear. Case of brain ahead of fingers.
