OH loves this one. It does mean getting all the bits in your store cupboard but its well worth it. Chicken curry for 4 3 large chicken breasts cut into chunks 2 onions diced 2 large garlic cloves crushed 1/2 pint of chicken stock (oxo will do) can of chopped tomatoes or a jar of passata 1 tsp ground ginger or a couple of tsp of grated fresh ginger 4 whole cloves 4 whole cardamom seeds (I add these last two in a muslin bag that can be removed after cooking) 1tsp of ground ; cinamon paprika cumin coriander turmeric a good dollop of Pataks curry paste (might need to go easy on this and adjust at the end ) a couple of sachets of coconut cream and lastly a couple of chopped chilli peppers (according to your taste buds) Cover the chicken chunks in all the dried ingredients and curry paste. Gently fry the onions and garlic, then add the chicken and cook until the outside of the chicken is cooked. Add the stock and tomato, bring to the boil and then pop in the oven for approx 40 mins. Take out of the oven and add the coconut cream which will thicken it up and adjust the flavour by adding more curry paste if needed. Add the sliced fesh chilli peppers (fresh coriander is also good) I cheat and use microwave rice ;D This freezes very well too

Its really easy to make Shrub but go easy on the curry paste and chilli's if you don't like it hot, the coconut cream can take some of the bite out of it so a spoonful of tomato puree could be used instead. I like it hot and a good dollop usually means a huge dollop of curry paste Chopped cucumber in yoghurt is good on the side.

It freezes really well Pam, I usually make a big pot full and freeze individual portions as I usually can't be bothered to cook from scratch during the week, just got to remember to take it out of the freezer
