Very,very naughty but very,very nice ;D BASE 9 ozs Digestive biscuits 4 ozs butter FILLING 2 x 300g Philadelphia 284 ml pot double cream 100g icing sugar 1 tsp Vanilla extract TOPPING 400g punnet of Strawberries 25g icing sugar Crush biscuits , melt the butter and mix together thoroughly. Press crumbs firmly into a lined loosebottomed 8" tin Leave to set in fridge for about 1 hr Using an electric whisk beat together the philly and icing sugar until smooth then beat in the cream and vanilla extract and blend well. Put mixture on top of the crumb base and smooth the top. Leave to firm up overnight preferably. Puree half the strawberries with the icing sugar and 1 tsp water Sieve Carefully remove cheesecake from the tin ,arrange strawberries on top and spoon over the sauce. Enjoy ;D
