This is one of Delia's - and delicious it is too ;D
For 2 people
2 Red peppers 2 Tomatoes - skinned and quartered 1 largish Garlic clove - sliced finely 4 Anchovy fillets 4 dessertspoons extra virgin olive oil
Slice the Peppers in half (leaving the stalks attached) and remove seeds. Put 2 tomato quarters in each half Snip an anchovy fillet into each pepper Sprinkle in the garlic Put a dessertspoon of oil into each half. Sprinkle with freshly ground black pepper- no need for salt because of the anchovies.
Put on a shallow tray and cook at no.4 - high shelf - for 50 - 60 minutes.
