Unfortunately, I can't claim this recipe as one of my own, but I thought I would share with you my Mum's recipe for Cheese & Bacon Scones. Once you've tried these, you probably won't have another plain cheese again!! 8oz flour (SR) + 1 level teaspoon Cream of tartar & half a teaspoon of bicarbonate of soda 2 oz butter / margarine milk to mix 2-3 oz cheese finely grated 3 level teaspoons mustard powder 4 rashers smoked bacon finely chopped Pepper for seasoning Sieve dry ingredients together. Rub in the butter/margarine. Mix in the pepper, cheese & bacon. Gradually add the milk until the mixture binds together, although it shouldn't be 'sticky'. If it gets a bit sticky carefully add a bit more flour. Roll out to about three quarters of a inch thick, and use a cutter to make round shapes. Put on a lightly greased tin / tray and brush the tops with milk. Bake in a hot oven 450 - 475 or 7/8 gas for about 10 - 15 minutes. Then enjoy!! Keep wrapped in tin foil once cooled (although they probably won't hang around long enough to cool down ). Best eaten the same day and when still warm (which isn't difficult!)

Those sound delicious. Another one to add to the recipe book, and certainly one for special breakfasts. Thankyou bagpuss.

No Tigridia, the bacon doesn't need cooking first, as you chop it up very small, so it gets cooked in with the scones.
