500 g cooking apples 750 g cooked beetroot 250 g soft brown sugar 300 ml malt vinegar one large onion peeled and sliced one level teaspoon salt half teaspoon ginger
Peel ,slice apples into saucepan. Add onion ginger, salt, sugar and vinegar. Heat to dissolve the sugar,cover and simmer for 10-15 minutes to cook the onions and apple. Add the beetroot and cook ( simmer ) uncovered until thick approx 1 hour.

oh, wish I'd had this last year when I was up to my eyes in beetroot. This year I haven't done any. It sounds delicious. Thanks robin
