Hi all,
I know some of you have a Lidl near by: they've been selling large frozen duck breasts. One breast feeds two, and they're incredibly quick. Here's what we do:
1. Cut the breast in half, and score three deep slashes in each half.
2. Take any fresh herbs you have (we use rosemary, thyme, oregano, sage and thyme - but any herbs will do), chop them up to make about a tablespoon full of chopped herbs, chop and add a glove of garlic, add a teaspoon of wholegrain mustard and 4 tablespoons of olive oil. Mix it all together, and cover the duck breasts with the mixture, ensuring it gets into the slashes. Leave to marinate for as long as possible.
3. Preheat oven to gas mark 6. Fry the duck breasts on both sides (total around 15 minutes) over a medium heat. Then transfer to the oven, and bake for between 10 and 15 minutes, depending on thickness.
4. Enjoy.

Then serve with apricot jam heated up in a saucepan and mixed with finely chopped dried apricots...simmered until the jam is hot and almost melted

The problem with not being out in the garden is that I switch the focus to the kitchen ;D ... cheers ...
