Got some rather nice pork belly strips....what would you do with them ?
I'm tempted to flash fry them to seal them in garlic, herbs and maybe a bit of ginger and then roll them up, wrap them in foil with a nob of butter and some chopped dried apricots and cook in the oven.
Any other suggestions ?

Rub them with salt and spices for a week, draining off residues daily, and hey presto, you have home cured bacon - and you will never want to buy shop bacon again ...

Well to be safe, salt and pepper are probably best to start with, but I tried once using a blend which included ground juniper berries, and the taste was rather exotic ! Brown sugar is another addition, which tends to offset the saltiness. I have not experimented with any other spices, but think most could be used to give a specific hint to the flavour.
