4oz White Mustard Seed 4oz Black Mustard Seed (both should be available from health-food shops) Ground black pepper 1 sprig of tarragon (fresh) 2-3 Blades of mace 1/2 teaspoon Fennel Seed salt 1 clove garlic, crushed 1 chilli, crushed White wine or cider vinegar (75ml bottle should be enough)
Place all the incredients in a large glass bowl (not a metal bowl as it will taint the flavours) and cover generously with cider vinegar or white wine vinegar. Cover the bowl with cling-film and leave for a day or so. The seeds will absorb the liquid and if you need to top it up you can do so.
When the seeds have swollen and absorbed most of the liquid, put small amounts into a food processor and blitz until you are satisfied with the consistency - more blitzing makes a less crunchy mustard. You probably won't be able to do the whole lot at once so transfer the pureed mustard to a clean bowl so you can mix it all back together again afterwards to maintin the same consistency throughout. Transfer to containers and store.
This mustard keeps pretty much for ever and improves with age. We're still eating mustard made last year and it's gorgeous!
Another note, if you don't have mace use nutmeg instead, and you have to guess about the chillies depending on what you have in the store-cupboard. I tend to use dried chillies rather than fresh.

I like the sound of that Plocket. I'm not that keen on the flavour of Fennel, but I daresay that could be left out? A very simple sauce for boiled ham is double cream warmed in a saucepan, to which mustard is added to taste. Oh and I love mashed potato with mustard in too. And it will sound good to say "Oh yes, I made the mustard myself" Would make a nice little gift too, in a pretty jar with a label and fabric cover.

We used to really like Colmans Hot English Mustard, but sadly they have changed the recipe and it's not the same.
Is your recipe anything like it, if so we might have a go at it.

Coo, thanks for that, P - I've never been to a healthfood place (bit of a contradiction in terms of my lifestyle) but I'll venture in to shop for this. Sounds marvelous. Funny thing, I've never really wondered how mustard is made... but love it. I bet bright yellow Colman's is made with something really unhealthy...

I don't think it's like Colemans really - I'm not so keen on Colemans actually. This is a more coarse mustard (texture-wise!) and is like French wholegrain mustard. All I can suggest is that you try it and decide what flavours you like then add more next time. You can of course add things afterwards if you feel it needs a bit more chilli or something. You'll have to soak the chillies overnight in vinegar to make them soft, and then re-puree, re-mix and re-jar everything - but that's not difficult. You can't taste the fennel seed WeeFairy - it just adds to the overall flavour, but there's no reason why you can't leave it out. We tend to be quite flexible with the recipe now and vary it sometimes. I've been known to put honey in too for sweetness, and add some red-wine vinegar as an alternative. If OH makes it he gets rather heavy handed with the chilli!!! ;D OM I can't remember the name of the shop I go to but Holland & Barratt might sell it. And you need both to get the right flavour
