Can we try and keep this purely as a recipe thread with comments etc going onto another thread?
Here's my favourite healthy recipe:
Pepperonata
* 1 large red onion, halved and thinly sliced * 3tbsp olive oil * 2 cloves garlic, finely chopped * 4 red or yellow peppers, deseeded and sliced * 1 green pepper, deseeded and sliced * 400g can chopped tomatoes * Herbs
Method 1 Cook the onion in the oil in a large pan until soft. Add the garlic and cook for another minute.
2 Add the peppers and stir until coated in oil. Season, then add the tomatoes and heat until simmering. Cover. Simmer gently for 30 minutes.
3 Remove the lid and simmer uncovered for another 15 minutes, stirring occasionally, until thickened.

Oh April, they're not a very healthy eating lot on here are they!
I must say something with 3 Tablespoons of olive oil may be a bit fattening! I think I'd rather have meat!! I think we're all fooled into thinking olive oil is healthy when, in fact, it is simply one of the less damaging fats. It's still fat and has the same amount of calories as lard!!
Anyway, lecture over. Here's one of my "healthy recipes" which, ahem, does include olive oil!!
Turkey pasta bake, serves 2 (f you're greedy pigs like us!)
Ingredients
1 small splash of olive oil! 400g of minced turkey (I buy Tesco value turkey thigh bits and mince them but breast would be lower in fat) 1 onion 1 clove garlic squirt of tomato puree 1/2 pint of chicken or veg stock herbs, fresh or dried, I use Oregano, Basil and Thyme, 200g of mushrooms, sliced 180g of macaroni. 1 (low fat if you must)mozzarella cheese.
Fry the onion and garlic in the olive oil. add the minced turkey and fry until browned. Add the stock and tomato puree and simmer for a bit (while having a glass of wine and doing the breakfast washing up). Boil the pasta as usual and add the mushrooms for the length of time you like them cook (I put them in when the pasta is boiling) Drain the cooked pasta and add to the turkey mix. Pour the whole lot into a suitable oven proof dish (I use a lasagne dish).
Slice the mozzarella and arrange on top of the mix then put in a pre-heated oven for 20-25 minutes at 190 degrees C. (Sorry we ain't got gas so I don't know the equivalent!) Serve with Rocket salad and enjoy!!
