MOROCCAN STYLE LAMB BURGERS WITH CUCUMBER SAUCE
Serves 4
For the burgers:
1 1/2 lb lean minced lamb 1 small onion, finely chopped 8 dried apricot halves, finely chopped (I use more!) 4 tablespoons pine nuts 1 oz fine dry breadcrumbs 2 teaspoons mild curry powder 1 egg salt and freshly ground black pepper
For the sauce:
1/2 cucumber, peeled and grated 1/2 pint natural yoghurt 2 tablspoons chopped fresh mint
4 pitta breads, heated and cut in half to serve Mixed green salad
Combine the lamb, onion, apricots, pine nuts, breadcrumbs, curry powder, egg, salt and pepper in a bowl. Mix well together with your fingers until thoroughly blended.
Divide the mixture into eight portions and shape each portion into a small flat burger. Cover and chill in the fridge for 30 minutes.
Meanwhile, for the sauce, squeeze the grated cucumber in a double thickness of kitchen paper to extract excess water. Mix together the cucumber, yoghurt and fresh mint. Season to taste with salt and freshly ground black pepper. Prehead the grill or prepare a charcoal fire.
Grill or barbeque the burgers until they are cooked to your taste (about 10 minutes for medium). Turn them half way through cooking to ensure that they brown and cook evenly.
Serve the lamb burders in the warmed pitta halves, accompanied by the mixed green salad and the cucumber sauce.

Hello Plocket!
I am cooking the Moroccan Lamb Burgers as we speak. I will post later how they went down with me and the oldest man of the house. My two sons have gone out so it is just the two of us.
They look yummy!
