(Sorry but I don't know what this is called!)
For each person you need 1 chicken breast. I carefully slice the chicken breast lengthwise so that it can be stuffed. It doesn't matter if you cut through the other side because it's wrapped up at the end. Thinly slice one large mushroom per chicken breast (more mushrooms if they are smaller) and layer inside the chicken breast. Put a good sized piece of emmenthal cheese on top (I use about 1/4 of a packet of emmenthal per chicken breast so it's nice and cheesy) and then about a dessertspoon of Dijon mustard. You can use other mustards but use less if they are strong. Dijon has a sort of sweetness to it that works. Then wrap the whole breast with a piece of parma ham (proscutio is good too, and cheaper!) or more if required.
I usually cook the chicken breasts in individual dishes but they can all be put in one dish if you are doing a lot. Cover the dish(s) with foil.
Pre-heat the oven to 180 degrees and cook for about 20 minutes with the foil on, and then remove it and continue cooking for another 20 minutes so that the ham is crispy. You probably can cook it for a shorter time but I'm a bit paranoid about uncooked chicken. It really does depend on the size of the chicken breasts too.
This meal works really well with leeks (finely sliced and steamed with a bit of butter and pepper) and roasted sweet potatoes.

We finally had Stuffed Chicken a la Plocket this evening ;D and it is really yummy! It was going to be Tuesday's supper but we had unexpected guests and I didn't have enough for them so we went on to plan b that night and Wednesday was so busy it was a hotting up night not a cooking night but....it was worth waiting for! What a scrummy dish. The mustard and extra cheese makes all the difference! We will be having this again! Thanks again for the recipe Plocket! Good luck to LP for her show tomorrow!

I did it but put thinly sliced onions in it too and wrapped it in bacon instead of ham (didn't have any ham)
It was delicious

Ooooo I like the sound of that MRH - I might have to add onions I started off using bacon but I'm really fussy and the bacon didn't crisp enough for my liking, especially underneath the chicken.

I think it's normally called Hunters Chicken from what I can make of it but not normally as exotic with the type of cheese and wrapping. Normally just cheddar and bacon ;D
