As requested, a tasty supper dish on it's own but OH would add sausages !! Ingredients:2-3 potatoes - (any type, enough to cover a shallow oven dish bottom cut thickly) 2-3 courgettes - Same amount as above 1-2 red onions 1/2 pt double cream - (naughty but nice!!) Grated cheese to taste squeeze of Lemon Juice tsp english mustard 1. Slice the spuds thickly, par boil for 5-8 mins under till nearly cooked 2. Slice the courgettes into the same size slices 3. Peel the onion(s). Finely dice about 2 tblsp and then cut the rest into rings 4. Fry the finely chopped onion in a little olive oil for 3-4 mins, add the mustard, lemon juice and cream, bring almost to the boil then take off the heat and add a good handful of cheddar cheese, more if you want it thicker. Stir well 5. Put a little sauce in the bottom of your dish; follow with a layer of overlapped spuds. Cover with a bit more sauce 6. Add a layer of courgette, cover with sauce. 7. Pop some red onion rings on the top and cover with any remaining sauce and some more cheese. 8. Bake in oven 180 degs until bubbling and gong brown on top and the courgettes are cooked. Enjoy! Flo

Picked some more courgettes this morning so have just been out to get double cream so we can try this tonight! Will report back!
